… Grilled Corn & Crunchy Tortilla Salad\u00a0<\/span><\/h4>\n

It\u2019s been a bit of a slower start to the Christmas cooking than I\u2019d have thought \u2013 but there\u2019s still plenty of time.\u00a0 This meal is particularly exciting looking.\u00a0 Beautiful colours and it\u2019s a jerk recipe.\u00a0 The Jerk chicken dish in Jamie\u2019s 30 Minute Meals is one of my favourites and so this has a lot to live up to.<\/span><\/strong><\/p>\n

This meal has a long list of ingredients \u2013 it must be among the longest in the book.\u00a0 From experience this always means the chances of doing it in time is reduced.<\/span><\/p>\n

Making this one was fun and very much in the usual rhythm of a 15 Minute meal.\u00a0 The meat is cut, flattened a bit and seasoned (to add flavour and reduce cooking time), the veg, herbs etc. that go into making the sauce are whizzed up in the food processor, and of course there is a salad to make and a bit of yogurt to top things off.<\/span><\/p>\n

The salad bowl you make with the tortillas is a bit of an unusual idea but pretty cool.\u00a0<\/span><\/p>\n

This is a lovely meal.\u00a0 It went done really, really well with my family. Definitely one to remember.\u00a0<\/span><\/p>\n
