This is the second to last meal.\u00a0 This is also the meal I\u2019ve least looked forward to cooking.\u00a0 I have repeatedly told myself not to leave this till, last \u2026 not to even leave this till nearly last.\u00a0 But I did.\u00a0 If I\u2019m honest it\u2019s the little pile of tofu in the corner that\u2019s been putting me off.\u00a0 There was tofu in the last meal I cooked, the Crispy Duck.\u00a0 \u00a0But that was hidden.\u00a0 Hidden in that it wasn\u2019t obvious from the picture so I only realized it was there when I wrote my shopping list.\u00a0 This meal proudly declared its tofuness and so put me off.\u00a0 But it\u2019s to be done and if it were done when \u2018tis done, then \u2018twere well it were done quickly. <\/em>So lets hope it is done quickly, in fifteen minutes or less!\u00a0<\/span><\/strong><\/p>\n

There isn\u2019t really any actual cooking here.\u00a0 The only cooking is the light toasting of the seeds, nuts and Kaffir lime leaves.\u00a0 The noodles are only soaked in warm water.\u00a0 Everything else is just sliced, mainly in the food processor.<\/span><\/p>\n

I was pretty confident that it would all be done in 15 minutes, less actually.\u00a0 But there is a fair bit to do and I was a little over.\u00a0<\/span><\/p>\n

As has happened before with the 15 Minute Meals, the dish I\u2019m not really looking forward to cooking turns out to be delicious.\u00a0 This meal is so multi layered in flavour its hard to describe.\u00a0 All of us who eat this after a few mouthfuls realized there was a flavour, in that last mouthful, that you hadn\u2019t picked up before.\u00a0<\/span><\/p>\n

So I\u2019m sorry Koh Samui Salad (incidentally another meal I can\u2019t pronounce the name off), I have ostracized you undeservedly.\u00a0<\/span><\/p>\n

There\u2019s loads of food here.\u00a0 It easily fed four, and I used slightly less noodles than the recipe prescribed. I took the left overs for lunch today. It\u2019s close on a miracle that I actually remembered to take it with me to work today, but I did.\u00a0 At lunchtime I bought a sandwich, sat down in the canteen and thought \u2026 bugger.\u00a0 My Koh Samui Salad sat forlorn on my desk\u2026<\/span><\/p>\n

\u2026 So I had it for dinner tonight whist watching YouTube videos of Rachel Khoo cooking food from her Little Paris Kitchen \u2026 I may be a little bit in love.<\/span><\/p>\n

\u2026 I have to say I think it tasted better tonight.<\/span><\/p>\n

One more to go.\u00a0 I want to finish where I started, cooking for my friend Gavin and brother Gordy.\u00a0 The fact that we now live in three different cities means getting a date sorted is proving annoying so it may be a while till I actually finish this project \u2026 but it feels kind of finished already \u2026 it\u2019s quite a sad feeling.\u00a0<\/span><\/p>\n
