I had Monday night off cooking a 15 Minute Meal.\u00a0 There were left overs to eat up and backgammon to practice.\u00a0 I have joined a pub backgammon team, or been commandeered might be more accurate.<\/strong>\u00a0<\/span><\/p>\n

For some reason I didn\u2019t think this one would go well.\u00a0 Nothing to do with the recipe I was just physically feeling a bit slow and I noticed my knife skills were a bit off. After a bit of a slow start it all went pretty well.\u00a0 Just one little issue.\u00a0 You make a kind of yogurt and mint dip.\u00a0 You are meant to use your stick blender to whiz the mint, pickled jalape\u00f1o and yogurt.\u00a0 I didn\u2019t get on well with this, it wasn\u2019t whizzing up very fast at all.\u00a0 I think that\u2019s because your using small quantities and the stick blender works better with larger quantities.\u00a0 It worked brilliantly with the soup.\u00a0 In the end I chucked this yogurt mix in my food processor.<\/span><\/p>\n

It was all done in fifteen minutes and twelve seconds.\u00a0 This was another fun hands on meal to eat.\u00a0 Lovely colours. \u00a0Beautiful flavours.\u00a0 Easily enough food for four people.\u00a0 You put a bit of rice in the soup and I was worried it wouldn\u2019t cook in time, but it did.\u00a0<\/span><\/p>\n

Between the pantry ingredients and some bits I had left over from other meals, of the seventeen ingredients I only had to buy seven. I am finding that I\u2019m using quite a few similar ingredients over again.\u00a0 I suspect if you were organised you could really cut costs buy buying larger qualities and sharing between meals.\u00a0 I doubt I\u2019ll be that organised.\u00a0 I did however shop for three meals again tonight.\u00a0 This seems to work well.\u00a0 It\u2019s either Winter Squash Penne with Mint & Avocado Chopped Salad or Beef Stroganoff with Fluffy Rice, Red Onion & Parsley Pickle tomorrow.\u00a0 Not sure which yet.<\/span><\/p>\n

I replenished and stocked up on a few pantry ingredients today and spent \u00a34.16.\u00a0 I saw a few things that were a good deal.\u00a0<\/span><\/p>\n
